White Wines

Our white wines are made exclusively from Sauvignon Blanc. Fresh and full of fruit, they show the full range of typical sauvignon flavours; A citrussy background (gooseberry, grapefruit and lemon) is complemented by tropical fruit notes (lychee) and floral aromas (elderflower). Great with seafood, chicken and spicy oriental dishes.

New Burgundy oak barrels and the richness of the vintage has resulted in a full-on wine. Powerful fruit flavours, dominated by tropical fruits (mango, pineapple and banana) are balanced by spicy vanilla toasted oak notes.

Botrytis Sauvignon 2005

Price: 30.00€ (37.5 cl)

Botrytis or "noble rot" helped produce a tiny amount of this super-concentrated sweet wine. Intense flavours of apricot, passion fruit and banana combine with honey and acacia and are all wrapped up in a citrussy freshness in this rich and complex wine.

Red Wines

Made from a blend of Merlot and Cabernet Sauvignon, two styles of red wines are produced at Domaine Chater; traditional (a majority of the wine aged in our stainless steel tanks) and oak aged (made from old vines and aged in 100% French Oak). Our traditional wines have the emphasis upon rich fruit flavours with subtle tannins and are great with red meat dishes. Chater oak aged wines are made with 40-year old vines and barrel-aged for 12 months in French oak barrels with one-third of the barrels being renewed every year - producing complex wines with layers of fruit, liquorice and spice. Great with red meat and rich sauces.

70% Merlot and 30% Cabernet Sauvignon, this wine is elegant and multi-layered. There's a lot going on in this wine with flavours of liquorice and cherries balanced by well integrated tannins. Starting to drink well and will also reward patience.

75% Merlot and 25% Cabernet Sauvignon. Elegant and soft with flavours of sweetly stewed red fruits and notes of spices and tobacco. Drinking well now.

back by popular demand, our 100% merlot! Rich and concentrated, sweet dark fruits combine with hints of brazil nuts, tobacco and leather. Drinking well now and will reward patience.

Oak Aged Merlot Cabernet 2005

The wonderful 2005 vintage helped produce this richly seductive wine. Exotic spicy mix with with creamy vanilla notes and are balanced with deep berry fruit and intense cocoa flavours. Fantastic drinking already and will only get better over time. Ideal for any special occasion, with or without food.

Oak Aged Merlot Cabernet 2007

85% Merlot, 15% Cabernet. A higher percentage of merlot and 18 months in French oak barrels has made an elegant wine with blackcurrant and spicy cherry flavours. Will be ready for drinking beautifully over the next couple of years.

Oak Aged Cabernet (Cuvée Roy) 2007

Our first ever oak aged 100% Cabernet Sauvignon. Named after Roy Chater who has always wanted us to make an unblended barrel aged cabernet. The wine is intensely flavoured and well structured. Full of blackcurrant and smoky, nutty notes. Destined to age very well.

Oak Aged Merlot Cabernet 2008

60% Merlot blended with 40% Cabernet Sauvignon. Our 45 year old vines have once again helped produce a classic bordeaux-style blend. Real emphasis on red fruits and the complexity and spiciness resulting from a year of barrel aging.

Quintessence 2005

We make our very finest wine only in the best vintages. Just two barrels of wine were selected for Chater Quintessence 2005. The result is a powerful, complex and perfectly structured wine with flavours of toasted spices, cedar, chocolate and tobacco all combined with intense dark cherry.

Rosé

Chater Rosé is made predominantly from Cabernet grapes, producing a wine rich in fruit that is balanced with a crisp acidity. Deep in colour and full of strawberry and raspberry flavours this multi-medal winning wine is great as an aperitif or with barbecues and salads.
